Roasted Cabbage alla Olioo

Ingredients

• 2 tablespoons Olioo Chilli Olive Oil
• ½ head green cabbage, cut into 4 even wedges
• A pinch of garlic powder
• A pinch of red pepper flakes (optional, but che bello for heat lovers)
• Flaky sea salt and freshly ground black pepper, to taste
• 1 lemon, halved and ready to squeeze like you mean it

Let’s take that humble cabbage and turn it into a crispy, caramelised showstopper with a spicy Sicilian twist. One drizzle of Olioo Chilli and boom.

How to make it:

1. Set the stage:

Preheat your oven to 230°C —we’re going high heat for max golden-brown glam.

2. Cut and brush:

Brush each cabbage wedge generously with Olioo Chilli Olive Oil on both sides. This isn’t a time for restraint—abbondate!

3. Season with purpose:

Season with garlic powder, pepper flakes, salt, and black pepper. Season like you're on a cooking show.

4. Roast until charred:

Roast the wedges on a baking sheet for 15 minutes. Flip and roast for another 15 until they’re beautifully browned and just a little bit charred. That’s flavour, baby.

5. Zesty finish:

Serve hot with a squeeze of fresh lemon over the top and a final drizzle of Olioo Chilli. Pairs gorgeously with roasted fish, creamy burrata, or a glass of cold Vermentino or Fiano and a little gossip.

Pro tip: Leftovers? Chop ‘em and toss into pasta with a spoonful of ricotta and a swirl of, you guessed it, Olioo.
